Deiro Garcia is one of the most innovative coffee producers in the region of Huila, in southern Colombia. Deiro is a big fan of Harry Potter he named his farm in Pitalito after famous villain Lord Voldemort.
It's not just the name that's crazy, but also his approach to coffee production and processing. Deiro has been experimenting with fermentation for 3 years now, has done many tests with some outstanding results and developed his own process for processing his coffee on his farm. He started reproducing his own bacteria and yeast using various fruit and vegetable enzymes.
The washed process for this Caturra Chiroso is a traditional fermentation in cement tanks, preceded by a 24-hour fermentation of the cherries in the holding tank.
