For this coffee, great care was taken at every step of processing after selective harvesting at optimal ripeness. The coffee cherries were left to ferment whole for 24 hours before drying began. This process allowed the sugars and fruity character of the cherries to develop further, contributing to greater depth, sweetness, and complexity in the coffee while maintaining its clean and balanced profile.

After fermentation, the cherries were spread on raised drying beds, where they slowly dried for approximately 20 days. During drying, they were regularly raked and turned by hand to ensure even airflow and uniform drying of the entire lot. Careful manual work helped maintain consistent moisture and quality throughout the drying process.

Story

The Ureña family farm is based on a well-organized and self-sufficient model, where each family member has a specific role according to their area of specialization. Thanks to many years of sustainable management, the family controls the entire coffee production process – from harvesting coffee cherries to their processing, dry processing, and finally, packaging and export of the finished coffee.

A significant part of their farming is also an emphasis on sustainability and biodiversity. The farm is home to many native plants and trees that are part of the natural ecosystem of the coffee plantations. A well-thought-out shading system is used for cultivation, and fertilization is based on regular soil analyses. The coffee processing itself requires minimal water, and each resulting lot is fully traceable.

El Higuerón

El Higuerón is a type of tree known for its specific growth pattern. It begins to grow on another tree and gradually develops its own root system, reaching down to the ground. Once rooted, it begins to gradually overshadow the original tree, depriving it of space and resources.

The El Higuerón farm is located in the middle of a plantation bearing the same name, at an altitude of around 1,700 m. El Higuerón trees often grow through surrounding rocks, creating characteristic, distinctive shapes. They grow to considerable heights, and their canopies provide extensive natural shade for the surrounding vegetation.
