Every story has a beginning. Ours began back in 2012, when the idea of opening our own bistro or cafe first emerged. It was more of a quiet vision than a concrete plan, but it took deep root – and waited for the right time.

That time came a few years later. In November 2019, Soňa and Kuba returned from Scotland after two years, and Martin returned from Australia after the same amount of time. It was then that they revisited the original idea. Experiences from abroad, inspiration, and newly acquired energy gave the whole idea clearer outlines. Together with Martina, who brought practical experience from gastronomy to the team, they began to work on the concept of a bistro with a specialty coffee roastery.

Shortly thereafter, just before the end of 2019, we discovered a space on Staňkova Street. A place that immediately appealed to us with its atmosphere and potential. It was clear that our story could truly begin here.

January 2020 was marked by the first concrete steps. Jakub delved into coffee roasting education and completed a course under the patronage of the SCA in Prague. It was there that he made his first contacts in the specialty coffee community and began to shape our future direction. In the same month, we also acquired our first roasting machine with a capacity of 2 kg. A small, but crucial step.

And then it happened. On July 1, 2021, we officially launched Poppy Beans Coffee. A dream that began almost a decade earlier had become a reality.

Moreover, in the very first month, we took our roastery a step further – we acquired a conventional 12 kg gas roaster. This allowed us to grow, experiment, and bring you coffee we stand behind.

Today, Poppy Beans Coffee is the result of a long journey, the courage to start, and the desire to create something of our own. Every bean that passes through our roastery carries a piece of this story.
