Naše letní speciálka na cold brew všechny překvapí pestrostí palety chutí. Pokud si ji připravíte jako V60, za horka dominují intenzivní tóny hroznového vína a melasy, které však postupně za tepla přechází do meruněk s příjemnou malickou aciditou zralých jablek, kteoru všichni známe z moštu. Za studena se káva mění ve sladký nektar plný tropického ovoce, což je přesně důvod, proč jsme si tuhle kávu vybrali na sezonu cold brew.

Miriam Quesada Enciso is a second-generation coffee farmer. She acquired the Finca El Guayacán farm after the division of assets following her divorce from her former husband. She has been growing coffee there since 2005. Today, she runs the farm with her current husband, Libardo, focusing on quality coffee cultivation and processing.

Cultivation

The volcanic loamy soil is rich in nutrients and ideal for coffee cultivation. In addition to coffee, Miriam and Libardo also grow bananas and cassava.

Harvest and Post-Harvest Processing

Miriam and Libardo strive to improve their harvesting methods and ensure that workers pick only ripe, red coffee cherries. To motivate quality pickers, they offer better financial compensation and free meals.

After harvesting, the coffee cherries are sorted in water, and any light or low-quality fruits are removed. Then, the cherries are transported to a separate drying facility where they are regularly turned to ensure even drying.

For each coffee , we choose a roasting profile according to the individual parameters of each lot , so as to bring out the unique flavor profile of each product, taking into account altitude, processing method, acidity and sweetness.

Ecology

We pack our coffee in recyclable bags that do not contain aluminum and are produced with a zero carbon footprint.
