Peru Milton Rojas Washed

Milton tends his trees high in the Andes in the north of the country, near Colasay. His farm is located at an altitude of 1,800 meters, where cool evening temperatures prolong the ripening of the large, jewel-like Bourbon cherries. This extended ripening infuses them with complex sugars and nutrients. Milton strictly supervises the harvest to ensure that only the ripest cherries make it into the final product. The crop is then carefully washed, adding clarity to the cup. It is then sun-dried on terraces until it is ready for shipment. Milton’s expert cultivation, combined with this process, creates a delicious experience.
