Washed + Bioreactor (washed + bioreactor method):
The coffee cherries undergo a 24-hour fermentation under water at 20°C, and are then dehulled. Parchment coffee (i.e. coffee with the inner skin preserved) is further fermented in a bioreactor using the yeast starter Kazachstania humilis, for 12 hours in an anoxic environment (without access to oxygen). After fermentation, the coffee is washed, then dried – first mechanically for 8 hours, then resting for 24 hours (so-called “reposado”) and finally dried in the sun.

Farm
Café Uba is a Colombian coffee project founded in 2014 by Mr.Julio Cesar Madrid, a traditional coffee grower and third generation coffee farmer in his family. Driven by the desire to create a different model from the usual Colombian coffee companies, he decided to innovate and transform his coffee production intospecialty coffee(selection coffee) on its three farms:Rivera, Milan and Buenos Aires.
He started by growing different coffee varieties and developing different fermentation methods that led to clear differentiation and high quality sensory profiles. We focused on precise control of the fermentation processes and thanks to this we determined the ideal fermentation times for each variety, as well as drying protocols using different systems and techniques.
After years of fermentation experience, at Café Uba we have designed different processes adapted to our varieties:

Thanks to our experience and the good natural conditions of our farms, we have received various quality awards, both nationally and internationally - including wins at barista championships around the world.
Farms
Café Uba has three coffee farms located in the Risaralda region of Colombia, totaling more than 200 hectares of coffee plantations, with approximately one million coffee trees and more than 20 different coffee varieties.
The Rivera, Milan and Buenos Aires farms are located in the districts of Pereira and Santa Rosa de Cabal, in a region known asCoffee cultural landscape, on the slopes of the central part of the mountain rangeAndes, strongly influenced by the snow-capped Santa Isabel and Ruiz mountains. Thanks to the combination of mountainous terrain, geological diversity and climatic conditions, the local soils are young and rich in organic matter - specifically, they are classified as Entisols, Inceptisols and Andisols (according to Soil Taxonomy).
These young soils, together with a specific microclimate (little light due to frequent clouds that prolong the ripening of the fruit) and significant temperature differences between day and night (30°C during the day and up to 15°C at night), allow our coffee to develop complex and unique flavor profiles.

Variety Sudan Rum
We have been growing the variety at La Rivera farm for 11 years.Sudan Rum, which is known for itscopper color of leaves, tall plants and elongated grains. This variety belongs toEthiopian-Sudanese genetic lineagesand is highly valued for its taste properties.
La Rivera Farm is located in the district of Santa Rosa de Cabal, in the department of Risaralda, at an altitude of 1,700 m above sea level.
