Detailed description

Processing process:

  1. Harvest:Coffee is harvested very ripe to have a higher sugar content.
  2. Sorting process:During sorting, poor quality grains are removed so that only the best are processed.
  3. Dehydration:The cherries are transferred to a mechanical silo for approximately 48 hours at 28°C until they reach a moisture content of 20%.
  4. Fermentation:It is made using a wet oxidation process – a 24-hour fermentation in sealed bags (similar to GrainPro) at room temperature (around 24°C). Each bag contains 25–30 kg of cherries.
  5. Drying phase 1:The cherries are dried in a mechanical silo at 37°C until the moisture content drops to 15%.
  6. Drying phase 2:They then move to a parabolic drying system where the moisture content drops to 10%.

Siruma is a Colombian coffee company founded 5 years ago with the goal of working with neglected farming communities in the Cauca, Caldas and Tolima regions. The company’s name comes from the language of the indigenous Wayuu tribe and means “Heaven and Sky.”

Atunkaa Natural Sugarcane Decaf is an example of Siruma's commitment to transparency and fair prices for farmers. The coffee comes from the Central Cauca Association for Peace (ACC) in Piendamó, Cauca. The association was founded by a local farmer who wanted to increase the value of Castillo coffee and provide a stable income for his neighbors, avoiding the cultivation of illegal crops.

The coffee is decaffeinated by Descafecol using a sustainable sugarcane-based process. Through direct collaboration with the Siruma mill and processing plant, it ensures fair prices and full traceability back to the farmers who participated in the harvest.
